About Us

Hey there, I'm Case! Im a software engineer turned chocolate maker who cares about sustainability, walkable neighborhoods, and good design. Chocolate is my was of building the kind of third-space I want to hang out in: welcoming, transparent and rooted in the local community. 

I started san Diego Chocolate Company in 2025 as a passion project to get my head out of my laptop and into something real. After seven years of making chocolate out of my house, I launched on a brisk January morning at the North Park Farmers Market. I've never looked back!

We make single-origin chocolate locally in San Diego, using ethically sourced cocoa beans from around the world. Our craft happens start-to-finish in North Park, we roast, crack, winnow, stone-grind, conche and temper every batch before it becomes a bar. Then we melt that same chocolate for our signature craft chocolate milk.

How we make chocolate (the short version)

  1. Select & source: We partner with producers who pay farmers fairly and handle post-harvest well. 
  2. Roast: Light, dialed-in roasts to highlight origin character. 
  3. Crack & winnow: Separate nibs from the shells for clean flavor. 
  4. Stone-grind & conche: Grind to the silky texture, then refine the flavor and aroma. 
  5. Temper & mold: Shine, snap and a clean melt every time.
